National Chocolate Chip Cookie Day

If you are like many people, you remember your aging parent giving you chocolate chip cookies as a special treat. They may have even made them for you, filling the house with the wonderful smell of the cookies baking and giving you that sense of being home. Now that you are on a home care journey with your aging parent, it is your turn to treat them with these little bits of nostalgia. This recipe uses the same basic ingredients as most recipes, but the process is a little different. The result is cookies that are both delightfully crisp and indulgently soft and chewy. Make up a batch with your loved one and spend some time reminiscing about years gone by together. Be sure to put some aside for them to enjoy with their in home health care services provider as well.
What You Will Need
- 2 sticks of unsalted butter
- 2 large eggs
- 1 ice cube
- 2 teaspoons of vanilla extract
- 2 cups of all-purpose flour
- 1/2 tightly packed cup of dark brown sugar, plus 2 tablespoons, about 5 ounces total
- 3/4 of a teaspoon of baking soda
- 2 teaspoons of Kosher salt
- 8 ounces of semi-sweet chocolate
- 3/4 of a cup of granulated sugar
- Coarse sea salt for garnishing
- A medium saucepan
- A medium bowl
- A whisk
- A stand mixer with a whisk attachment and paddle attachment
- An airtight container
- An ice cream scoop
- A nonstick baking sheet
- A wire cooling rack
What to Do
- Place the butter in the medium saucepan and over medium high heat
- Gently swirling constantly, cook about 5 minutes, until it begins to turn golden brown
- Remove from the heat, but continue to swirl
- Swirl for an additional 15 seconds
- Transfer the butter to a medium bowl
- Add the ice cube to the medium bowl and whisk in the ice cube
- Move the bowl to the refrigerator
- Allow to cool for 20 minutes in the refrigerator, occasionally whisking it
- In a large bowl, whisk together baking soda, salt and flour
- In the bowl of a stand mixer, place the eggs, vanilla extract and the granulated sugar
- Attach the whisk attachment to the stand mixer
- Whisk on medium high speed for five minutes, until it begins to fall off the whisk in thick ribbons and has turned a pale yellowish brown
- Attach the paddle to the stand mixer
- Once the brown butter mix has cooled, add it to the egg mix in the stand mixer
- Add the brown sugar to the egg mixture
- Mix on medium speed for 15 seconds to combine it all
- Turn the mixer to low and add the flour mixture slowly until just combined, about 15 seconds (some flour should remain dry)
- Roughly chop the semisweet chocolates into 1/2 inch chunks
- Add the chocolate to the mixture
- Mix on low speed for about 20 seconds, until the dough begins to form
- Transfer the dough to an airtight container
- Refrigerate the dough overnight and up to 3 days
- Place the oven racks to upper and lower middle positions
- Preheat the oven to 325 degrees F
- Scoop the dough out onto the nonstick baking sheet using the 1 ounce ice cream scoop
- Make sure the scoops are about 3 tablespoons full and you can fit 6 to 8 on each sheet
- Tear each ball in half, then replace them with the rough side facing out
- Put the dough in the oven
- Bake around 15 minutes, or until the edges are soft, but the cookie is golden brown, rotating the top pan and bottom pan once about halfway through
- Remove from the oven
- Sprinkle the cookies with coarse salt, lightly
- Gently press the salt into the cookies
- Allow to cool for about 1 and a half to 2 minutes
- Move the cookies to a wire rack to continue cooling
- Serve warm
